5 INGREDIENTS - 5 MINUTES !  ...almost

For your enjoyment, here you will find some of my quick and easy recipes for cooking with our lean natural grass fed beef.  I have a "golden rule" when it comes to cooking - 5 ingredients / 5 minutes!   Although I don't always succeed in keeping with my golden rule, at least I try to find succulent recipes that don't have a long list of complicated ingredients, and that don't take a lot of my time, which I'd rather spend outside.  These are for your enjoyment, please use them and let us know how you like them!

 Juicy Hamburgers

Thaw a package of ground-beef.

Add in a large mixing bowl with:

Claude’s Barbeque Mesquite  Marinade
Ground Cumin
Garlic Salt
Salt and Pepper
Mix well.

Form into thick even burgers.

Grill over mesquite wood or charcoal grill on low heat until no longer pink, but not over-done. 

Add cheese in the last couple of minutes so that it melts a little.

Serve with New Mexico green chile, tomatoes and onions.

Steak au Poivre

- Pepper Steak -

Thaw a Top Sirloin Steak

 Combine

2 tbsp cracked black pepper
½ tsp garlic powder
¼ tsp salt

Rub this mixture well over both sides of steak.

 Cook steak over low to medium heat (pre-heated coated skillet) till desired doneness (don’t over-cook!)

 Set aside, keep warm.

 Add ¼ cup beef broth and
¼ cup dry red Wine

Cook over medium heat 4-5 minutes, stirring now and then

Meanwhile, cut steak diagonally across the grain into thick slices.  Drizzle with broth mixture. Garnish with fresh rosemary if desired.

Beef Stroganoff

 Thaw roast partially and cut into cubes, or thaw cubed meat. 

Place in slow-cooker:

2 large cans of cream of mushroom soup
Worchester sauce
Minced fresh garlic,  or garlic flakes
1 – 2 lb. cubed beef
Fresh sliced mushrooms, or canned 

Cook on low 10 – 12 hours.

 Add 1 can sour-cream.

Serve over noodles or rice.

Easy Roast

 The evening before you plan on serving the roast (24 hrs) place the frozen roast in slow-cooker.

 Add:
Beef broth and red wine, approx. 3 – 4 inches deep, or covering the roast about ½ way up 
Claude’s Barbeque Beef Marinade
Chopped onion and garlic.

 Drizzle the roast with a little extra virgin olive oil

Sprinkle some grill seasoning and/or any other seasonings of your choice.

 Turn slow-cooked on “low” and go to bed.

 Ready to serve the following evening!   

Serve with oven roasted potatoes, drizzled in olive oil and herbs.

Cowboy Casserole

 Thaw a ground-beef, brown in skillet. 

Layer in slow-cooker:
1 chopped onion
1 – 2 lb. browned ground-beef
6 peeled and sliced potatoes
2 clove garlic, minced
1 16oz. can kidney beans

 Spread on top:
1  15oz. can diced tomatoes
mixed with 2 tbsp. Flour, OR 
10¾oz. can tomato soup
 salt pepper

 Cook on “low” 5 – 6 hours or until potatoes are tender.

 Serve with warm biscuits

Italian Beef Roast

 Place frozen Roast in slow-cooker.

 Sprinkle with: 
 1 package dry Italian Dressing Mix

 Pour over roast:
 One or two 12 oz. (depending on size of roast) can or bottle of a high quality beer 
use Guiness, Sam Adams or other beer with flavor

 As a substitute for the beer, you can use one or two cans or bottles of coke (do not use diet coke)

 Cover and cook on low until next evening.  If roast is thawed, cook on low 10 – 12 hours.

 You can also shred the roast when done, mix a little barbeque sauce with it and serve on buns

Breakfast Chorizo

 Thaw a package of ground-beef. 

Mix. with 1 tbsp each of: 

Ground cumin
Black pepper
Garlic powder
Salt
1 cup white vinegar
¼ cup ground red chile powder

 Mix all together. Let sit for a little while, or overnight in the fridge.

 Fry in a little oil and serve with scrambled eggs and flour tortillas.

Meatloaf for the Soul

Thaw a package of ground-beef. 

Add in a large mixing bowl with:

1 egg
½ cup milk
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 chopped onion
½ cup Italian seasoned bread crumbs
½ tsp cumin
½ tsp sage
salt and pepper

 Mix, and place in meatloaf pan and bake at 300° for 45 – 55 minutes, or until no longer pink inside.

 Serve with mashed potatoes and a salad.

Pot Roast with Potatoes

 Partially thaw a roast, and cube it into 2” squares.  It is easier to cut when still somewhat frozen, or thaw a package of stew meat. 

Place in slow-cooker, or in oven pan, together with: 

2 envelopes dry onion soup, or one chopped onion
1 can cream of mushroom soup
½ cut water or beef broth or red wine
 Potatoes, halved
Carrots, cubed
Chopped fresh garlic

Slow-cooker: set on low and cook all day

Oven pan: cover tightly with foil wrap.

Tender Brisket

 Thaw brisket.

Place in large heavy foil, fat side up, and place in a deep baking dish.

 With foil still open, add:
 Claude’s barbeque meat marinade (about 1 – 2’ deep)
Salt, pepper, garlic powder
½ cup red wine
¼ cup olive oil

 carefully close foil by folding and rolling end until completely air-tight, doming it a little.

 Let marinate over-night in fridge. In the morning, take out and let sit in room temperature.  Do not open foil. Place in oven at 250° for 4 – 5 hours.  OR

Place in slow-cooker with the marinade, cool on “low” all day. 

Before serving, open foil, drain marinade, add your favorite BBQ sauce and place under broiler for a few minutes.

 Serve with potato salad or baked potatoes

Green Chile Stew

Partially thaw a roast and cut into small bite-sized cubes.  In a large zip-lock bag, add flour salt and pepper.

Place small cubes in plastic bag, zip, and shake well.

In a large pot, brown floured cubes in some hot oil.

Add:
Chopped fresh onions
Chopped fresh garlic (generously…)
Chopped hot green-chile (or medium…)
Potatoes, cubed small
can of corn, or fresh
can of pinto beans

Add water until completely covered.  Add salt and pepper.  Simmer several hours, stirring now and then and maybe adding water. 

Alternatively, place in slow-cooker after browning meat, cook on “high” all day.  Check water level at some point.

Serve with warm biscuits or flour tortillas.

Savory Meatballs

 Thaw 1 lb. ground beef

Mix with:
½ cup soft breadcrumbs (or dried)
½ cup milk
1 beaten egg
¼ tsp nutmeg
salt pepper

 Form into golf-ball sized balls.  Bake in oven at 300° until browned and done (approx. 30 min.)

 In a bowl, combine
1 cub beef broth
1 tbsp cornstarch

Microwave a minute at a time on high while stirring in-between, until thickened.  Usually about 4-5 min.

Stir in a can of mushrooms with juice.

Pour over meatballs.

 Let simmer a while or serve immediately.  Great with mashed potatoes or noodles.

Quick Pizza Casserole

Thaw 1 lb. ground beef 

Brown in skillet. 

Add one large can pasta sauce of your choice 

Add anything you want – corn, chile, olives etc.

Let simmer a moment

 Unroll a pizza crust dough in prepared pan and press into bottom and halfway up sides.  

Add meat mixture 

Sprinkle shredded cheese on top

 Bake uncovered 30 minutes at 350°.

 Serve with green salad and garlic bread

Steak

 Thaw your steaks in fridge over-night (not in microwave) 

For T-Bone, Rib-eye etc. simply sprinkle some grill spices on the meat, let sit for a few hours.

 For cuts such as flank steaks etc. marinate in the morning in a mixture of:
Claude’s Barbeque Meat Marinade
Crushed or minced garlic 
Red wine and grill spices
Olive oil and a little lemon juice

 When ready to cook, sear the meat quickly over a high heat on each side to seal in its natural juices and then reduce the heat to medium or low.  You can also baste to add moisture. 

Don’t over-cook!  Lean steaks require 30% les cooking time.
