HOW TO ORDER YOUR BEEF You send us a deposit together with your completed Custom Order Form or JX Ranch Package to reserve your whole beef, 1/2 or 1/4 of a beef. When we get close to processing day, we will weigh the animal, notify you of the amount you will then send us to complete the purchase of the animal. (The price of a whole beef is currently $1.60/lb, a 1/2 beef is $1.65, and a 1/4 beef is $1.75/lb.) We will then transport the animal to Fort Sumner Processing, where it will be dry-aged for 14 days, packaged as per your Order Form or JX Ranch Package, and frozen. If you pick up your meat, you will pay Fort Sumner Processing for the processing, which we estimate, depending in the size and yield, will cost approx. $256 for a whole beef, $128 for 1/2 beef and $64 for 1/4 beef. If you want the packaged and frozen meat sent to you, we ship it via Fed-Ex (cooler-return deposit required) to any of the contiguous United States. Estimated Cost & Yield We estimate a total price of $4.74 per pound of meat for a whole young beef (approx. 307 lb of package meat), $4.88 per pound for a half or side (approx. 153 lb of packaged meat), and $5.08 for a quarter (half of a half) beef (approx. 77 lb. of packaged meat). This price is for all "cuts" -- T-bone steaks, rib steaks, roasts, hamburger, organs etc -- and includes all slaughter and processing costs. As to freezer space required, a whole beef will require approximately 7 cubic feet and half a beef 3.5 cubic feet. Our young beef are raised to about 450 - 500 lb pounds on
native range with their mothers as they are rotated from pasture to pasture.
At about eight months old they are weaned and put into a separate
pasture where they continue to graze free range. For a
few weeks before slaughter, we supplement the grass diet with a little
free-choice corn or barley in the pasture to
creates some marbling in the beef and enrich the flavor. These yearling animals are slaughtered at about 700 to 800 pounds which
is 400 to 500 pounds less than the weight of industrially raised cattle.
Because they are younger, free-ranging and raised in a low-stress,
natural and humane environment, the beef is lean and healthy. We
transport the beef to the small town of Fort Sumner, NM, where it will be processed at Fort Sumner
Processing which is a clean, family owned and operated, and U.S.D.A.

for 14 - 21 days and then process the beef
according to your specifications An average beef, weighing between 700 - 800 lb, depending on size and yield, would give you approximately 307 lb. of meat, a half beef approximately 153 lb. of meat and a 1/4 beef will give you approx. 77 lb of meat. On the custom order form (whole and half beef only) you may choose exactly what cuts you want, how thick you want your steaks, how big you want your roasts, and how lean you want your hamburger meat etc. An even simpler way is to choose our JX Ranch package, which is the selection we use for our own meat. For orders of 1/4 beef use the JX Ranch Package. You can ask for dog bones, kidney etc for your pets. If you have any questions at all, please contact us and we'll be glad to help you. This is an estimate of percentage of the different cuts you should get from your beef: Steaks (Rib, T-bone, Porterhouse, Sirloin, Flank)
about 26%.
